Healthy Protein Pancakes!

Pancakes don’t have to just be for Sunday’s! My 4 ingredient protein-pancakes make a perfect weekday breakfast. They take just a few minutes to cook up, and are well worth the effort. 



🥞 1/4 cup pumpkin purée (or mashed bananas or applesauce

🥞 1 flax egg, or 1 egg, or 1 egg replacer

🥞 1/4 cup quinoa flour, protein powder, or garbanzo bean flour 

🥞 1-2 teaspoons coconut sugar (or sub stevia & do only .5 tsp at a time)

🥞 Any fillings you want!! 


1. Mix all together until smooth. 

2. Add some coconut oil to a skillet and fry them up.

3. Top with real organic maple syrup, vegan butter, nut butter, etc.
