Coconut Almond Chocolate Chip Cookies!

I created this recipe when making these cookies for a friend… and I loved them SO much I made another batch within 24 hours!

Packed with body-nourishing ingredients, these cookies are not only delicious but are energizing and make a perfect on-the-go snack or late night dessert. They are vegan, gluten-free, refined sugar free.

Coconut Almond Chocolate Chip Cookies!

Ingredients

  • 1 tbsp flax seeds

  • 3 tbsp water

  • 1 1/4 cups almond flour

  • 1/4 cup raw cacao nibs

  • 1/2 cup shredded unsweetened coconut

  • 1/2 tsp baking powder

  • 1/4 tsp kosher salt

  • 1/2 tsp cinnamon

  • 1/4 cup coconut sugar

  • 3 tbsp melted coconut oil

  • 1/2 tsp vanilla extract

Method

  1. In a small bowl, stir together flax seeds and water and let sit for 3-5 minutes.

  2. In a separate larger bowl, combine almond flour, cacao nibs, shredded coconut, baking powder, salt, cinnamon, and coconut sugar.

  3. Whisk the coconut oil and vanilla together with the flax seed and water mixture.

  4. Add wet ingredients to dry ingredients, mixing by hand until thoroughly combined.

  5. Preheat oven to 350 degrees F. As oven is pre-heating, chill cookie dough in the in the freezer for 10 minutes.

  6. Pre-grease a baking sheet with 1 tsp coconut oil.

  7. Use a large spoon to place a dollop of cookie dough on baking sheet, using your hand to create cookie form., Leave 1-1/2 inch space in between each cookie.

  8. Bake until edges start to look golden or brown, 10-15 minutes.

  9. Remove from oven, let cool (if you can!) and store in an airtight container!
