Easy Cashew Cheese!

I make this cashew cheese every week and always have some on hand. It is perfect for topping on toast, mixing into salad, using as a pasta sauce, eating as a dip, and more! It is the perfect vegan alternative to anyone who loves a spreadable cheese. ;)

Here it is in an amazing veggie sandwich:




  • ~3 cups boiling waterwater

  • 2 cups raw cashews

  • 1/2 medium sweet onion (white, yellow, or even shallots!)

  • 3 tbs nutritional yeast

  • 2-3 cloves garlic

  • 1 teaspoon dried Italian herb blend (or just rosemary works as well!)

  • 1 teaspoon pepper

  • 1 teaspoon salt

  • 1 teaspoon lemon juice


  • Cover the cashews with boiling water and let sit, covered, for at least 15 minutes.

  • Drain the liquid into a glass container and set aside.

  • Place all of the remaining ingredients in a blender.

  • Add 2 tbs of the hot water and blend, adding more water as needed.

  • That’s it!
