V/GF Banana Bread!
It’s here! My most favorite recipe for the beloved morning treat. :)

Hot Tip: I love keeping a slice in my bag for after a workout. The protein helps your muscles grow & the whole grains will give you lasting energy.
3 ripe bananas, mashed
1 Tbsp flax seed, mixed with 3 Tbsp water
3 Tbsp coconut oil, melted
1/2 tsp vanilla extract
1/3 cup honey
3 1/2 tsp baking powder
3/4 tsp sea salt
1/2 tsp ground cinnamon or ginger (or a combo of both!)
1 1/4 cup almond meal
2 1/2 cup quinoa flour (or other GF flour blend of choice)
3/4 cup unsweetened almond, oat, or coconut milk
Optional: 1 extra banana, sliced
Preheat oven to 350 degrees F and grease a loaf pan with coconut oil.
Add all ingredients wet ingredients together (except almond milk) & stir until combined.
Add in baking powder, salt, & spices. Stir until combined.
Add in flour, a little bit at a time. Alternate with milk to reach desired consistency - should look like a smooth & wet batter, but not too drippy.
Pour combined ingredients into loaf pan. Add sliced banana on top (if using.)
Bake for ~60 minutes until a knife comes out clean out of the center of the loaf.
Let cool completely, serve with nut butter or enjoy alone!
