Self-Care Sunday Cinnamon Rolls!

1 cup unsweetened almond milk
2 Tbsp vegan butter or coconut oil
1 packet instant yeast (I used Feldman’s)
1 Tbsp coconut sugar
1/4 tsp sea salt
3 tsp pumpkin pie spice
1/3 cup pumpkin puree
2 3/4 - 3 1/4 cups quinoa flour (or any other flour of your preference.)
3 Tbsp vegan butter or coconut oil
1/3 cup pumpkin puree
1/2 cup coconut sugar
2 tsp pumpkin pie spice
1/2 chopped walnuts
Heat the almond milk and vegan butter over the stove until warm but not hot. Transfer to a mixing bowl, making sure it’s not too hot, otherwise it will kill the yeast. (It should feel like bath water.)
Add in sugar, salt, and yeast. Let sit for 10 minutes.
Add pumpkin pie spice and pumpkin puree, stirring until smooth.
Stir in flour, a small amount at a time. It will get very thick, and when it is too sticky to stir, knead for a minute, forming it into a ball.
Transfer to a mixing bowl coated with coconut oil, cover and let sit on a warm stove or in the sunlight to rise until it is doubled in size (about 45 minutes.)
When done rising, roll out the dough on a lightly floured surface, shaping it into a rectangle.
Mix together melted vegan butter, pumpkin puree, sugar, and spices. Brush over the dough to the edges, making an even coat. Add on nuts (optional.)
Tightly roll the dough all the way from one end to the other. Cut with a serrated knife into equal sections (apx 2 inches.)
Coat a baking dish with coconut oil.
Place sections in baking dish, about an inch apart.
Brush sections with vegan butter.
Preheat oven to 350 degrees. Cover and place on top of the stove to let rise until oven is done preheating.
Bake rolls or 30-40 minutes, until golden brown.
Let cools & eat. You can also top with vegan butter, sunflower seed butter, or vegan cream cheese frosting - (Mix 1/4 cup cream cheese with 2 tbs vegan butter & 2 tbs maple syrup.)
